Pizza

This was a great pizza that was inspired by a local pizza shop in town.

Pizza

1 prepared pizza crust (used Boboli)
1 tbsp olive oil
1 large onion, thinly sliced
1/2 tsp dried thyme
salt and pepper
2 tbsp apricot preserves
1 cup cooked chicken, cut into bit size pieces
4 oz goat cheese

Place onions into a large skillet on low to medium heat.
Saute onions for about 30 minutes until they caramelize.
Add thyme, salt, and pepper to the onions.
Place the pizza crust on a pizza pan, and top with the apricot preserves.
Top the pizza with the onion, chicken, and goat cheese.
Bake at 425 degrees for 12 minutes.

Veggie Pizza




I haven't found any local pizza that I like better than my own. I love the pizza from my hometown, but driving 80 miles to Cardo's just doesn't make sense.

I had to work today, so I needed something quick, easy, and delicious. This really hit the spot!!!


Veggie Pizza

1 frozen pizza crust (thawed overnight)
cornmeal
cooking spray
1/2 cup pizza sauce (canned)
a couple tbsps of diced onion
1/2 green pepper, diced
1 clove garlic, minced
1 cup shredded mozzarella cheese
grated Pecorino Romano cheese
Dash of dried basil and oregano
handful of fresh basil

Spray pizza sheet with non stick cooking spray.
Sprinkle pan with cornmeal.
Stretch dough to fit pan.
Spread sauce on dough.
Add garlic, onion, and green pepper.
Cover with cheeses.
Top with dried basil and oregano.
Bake at 450 degrees for 15 minutes.
Sprinkle pizza with fresh basil.

Grilled Pizza




I have been wanting to make grilled pizza for awhile. I will definitely be making this again!! Just be sure to have all the ingredients prepped and ready to assemble the pizzas. I made 2 pizzas. During the making of the second one, I had to be pulled away from the grill for a few seconds and slightly burnt the bottom. Luckily it was still edible. The meal came together quickly by using canned pizza sauce, and pizza dough that was previously frozen. It's a great way for me to get dinner on the table for a night when I work late, am on call, and my husband has an evening class.

Grilled Pizza

2 frozen pizza doughs (thawed in fridge overnight)
1 can pizza sauce
1 red bell pepper
1/4 red onion
3 cloves of garlic
1 bunch fresh basil
2 cups shredded mozzarella cheese

Prep all ingredients so that everything is ready for the pizzas to be assembled.
Cut the pepper and onion into thin strips.
Mince the garlic.
Roughly tear the basil (or roll together in a bunch and make thin slices for basil confetti).
Preheat the grill to medium high.
Spray the grill with cooking spray(carefully) or drizzle the dough with olive oil.
Place the dough on grill.
Allow to grill for about one minute, or until the first side has a few grill marks.
Flip dough over, and begin to assemble pizza.
I added the sauce, onion, garlic, peppers, cheese, and some of the basil.
Grill until the cheese had melted.
Make sure to check the bottom of the crust to make sure it isn't burning.
Remove from grill and sprinkle with the remaining basil.

Homemade Pizzas




I love pizza. I think I could have it at least a couple times a week. You can change it up so much, and make about any kind you can think of.

Four Cheese Pizza

1 lb shredded mozzarella cheese
1/2 cup grated Pecorino Romano cheese
1/2 cup grated Asiago cheese
1 tbsp grated Parmesan Reggiano
1 clove diced garlic
1 cup pizza sauce
1 frozen pizza crush, thawed

Defrost frozen pizza crust in refrigerator overnight. Preheat oven according to directions on pizza crust package. Any kind of pizza crust can be used for this recipe. Place crust on baking sheet. Top with sauce, garlic, and cheese and bake according to your selected pizza crust directions.

For the other pizza, I cooked as above and added fresh sliced tomato and fresh basil.

Homemade Pizza Night





I was craving pizza, and wanted something that wasn't so terrible for the waistline. I went ahead and made my own pizza, so I would know exactly what was going into the pizza.

Veggie Pizza

1 tsp extra virgin olive oil
1 zucchini
1/2 vidalia onion, diced
1 small green pepper, diced
1 refrigerated pizza dough
1/2 cup prepared pizza sauce
2 tsp tuscan spice blend
1/2 tsp pepper
1 cup mozzarella cheese, shredded

I sauteed the onion, zucchini, and green pepper in oil for about 5 minutes. Add spice blend and pepper to veggies. Spread pizza dough onto greased cookie sheet. Top with sauce, veggies, and cheese. Bake at 400 degrees for about 15 minutes.


Margarita Pizza

1 refrigerated pizza dough
1/2 cup prepared pizza sauce
1 tsp tuscan spice blend
3 cloves garlic, minced
3 roma tomatoes, with seeds removed
1 bunch fresh basil
1 cup shredded mozzarella cheese


Spread pizza dough on greased cookie sheet. Top with tomato, garlic, basil, spice blend, and top with cheese. Bake at 400 degrees for about 15 minutes. Top with an additional sprinkle of fresh basil.

Pizza Night




Tonight I decided to make a couple homemade pizzas. I had a ton of fresh tomatoes and wanted to use them up. I also had a leftover chicken breast to use. I made a barbecue chicken pizza and a tomato, mozzarella and basil pizza.



Barbecue Chicken Pizza

1 store bought pizza crust
1 chicken breast (precooked-diced into small cubes)
1/3 cup barbecue sauce (I used Sweet Baby Ray's)
2 small slices of a red onion
1 cup shredded cheddar cheese



Spread BBQ sauce on pizza crust, then add onion and chicken. Cover with cheese. Cook according to crust package directions.



Tomato Mozzarella and Basil Pizza

1 store bought pizza crust
drizzle of extra virgin olive oil
3 roma tomatoes (thinly sliced)
4 slices of fresh buffalo mozzarella cheese
2 cloves of garlic (minced)
handful of fresh basil leaves



Drizzle crust with olive oil, and arrange tomatoes, basil, and garic onto crust. Cook according to crust directions.
